Ingredients
3 medium Honeycrisp or Pink Lady apples, peeled and diced
1 tsp ground cinnamon
2 tbsp light brown sugar
1 cup quick oats
1/2 cup all-purpose or oat flour
3 tbsp cold butter, cubed
1 tsp pure vanilla extract
1 tbsp fresh lemon juice
2 tbsp pure maple syrup
2 cups Greek yogurt
Instructions
Peel and dice apples into half-inch cubes.
In a saucepan over medium heat, melt one tablespoon of butter.
Add apples, brown sugar, cinnamon, and lemon juice to the pan.
Cook for 8 minutes until apples are soft.
In a separate skillet, toast oats and flour with remaining butter until golden and crisp.
Stir vanilla extract and maple syrup into the cooked apple mixture.
