Ingredients

8 oz (225g) halal or plant-based salami, sliced into rounds
12 small mozzarella balls
24 mixed green and black olives
18 cherry tomatoes, quartered
8 marinated artichoke hearts
68 pepperoncini or marinated jalapeños
2 tbsp extra virgin olive oil
1 tbsp balsamic glaze (optional)
24 wooden skewers, pre-soaked for 1 hour if grilled


Instructions

Cut salami into 1/4-inch thick rounds
Quarter cherry tomatoes using a small paring knife
Gently pat mozzarella balls dry to remove excess moisture
Rinse artichoke hearts with fresh water and drain upside down
Thread skewers with alternating pieces of salami, mozzarella, olives, cherry tomatoes, artichokes, and pepperoncini
Drizzle skewers with olive oil and optional balsamic glaze for extra richness

Notes

Pre-soak wooden skewers in water for 1 hour to prevent burning if grilling
For milder heat, substitute pepperoncini with marinated jalapeños
Balsamic glaze can be omitted for paleo/keto versions
